World's Best Quiche

Chris Mullin's Quiche

Note: This recipe makes two quiches!

Ingredients in bold.


The Crust:

Cut 1/2 pound plus 2 tablespoons of butter into small cubes. Take 3 cups of all purpose flour and mix in butter cubes using only the tips of your fingers. Keep pinching the larger pieces of butter until you have combined all the butter with the flour. The consistency should be similar to the flour you started with. In a separate bowl mix two whole eggs and two tablespoons of lemon juice. Now, using a fork, slowly combine the egg mixture with the flour mixture. Once this is done, form a ball and Voila! Your dough is ready!

The Matrix:

Mix, using a whisk, 3 cups heavy cream, 1/2 cup of sour cream, 1 cup of milk and 3 cups of whole egg. Season to taste with salt, pepper, nutmeg and allspice.

The Quiche:

Roll out the dough to 1/4 inch thickness and place in pre-greased pie tin. Now fill quiche with whatever you like (cheese, spinach, etc.) Once this is done pour the matrix over the filling until it reaches about 3/4 of the way up the crust.

Baking:

Place quiche in a pre-heated oven at 375 Degrees F. It should be done after about 45 minutes.
